Try This Spin on Your Spaghetti Squash

Spaghetti Squash Bake


1 small spaghetti squash

1 - 20 ounce jar low sodium marinara sauce 

1- 20-ounce package lean ground turkey

1-cup low fat shredded mozzarella

1/4 cup grated Parmesan

1/2 package turkey pepperoni

1/4 yellow onion diced

3 cloves garlic

2 tablespoons Italian seasoning

Black pepper (to taste)

Garlic salt (to taste)

1 tbsp EVOO


Preheat oven to 400 degrees

Cut the spaghetti squash in half and scape out the seeds

Place the flesh side down on a glass dish and bake for 40-45 minutes

Remove from heat and let cool

Heat the EVOO in a large saucepan

Add the diced onions and sauté the onions until slightly browned

Add the package of ground turkey and cook over medium heat, stirring occasionally (about 8-10 minutes)

Add the Italian seasoning, garlic salt and black pepper

Pour the jar of marinara sauce over the browned ground turkey

Chop the 3 cloves of garlic using a food processor

Add the chopped garlic and grated Parmesan to the sauce

Remove the insides from both halves of the squash and place in a rectangular glass dish. Add the sauce to the glass dish and mix together.

Sprinkle the mozzarella over the spaghetti and top with turkey pepperoni.

Bake in the over for another 15-20 minutes until cheese begins to brown.
