How to make the Cauliflower Crust Pizza everyone is raving about


INGREDIENTS

· ½ head cauliflower

· 1 egg

· 4 roma tomatoes

· 1 cup mushrooms

· 1 cup diced sweet potatoes

· ¼ onion diced

· 1 cup spinach sautéed

· ¼ cup diced red peppers

· ¼ cup diced green peppers

· Blended Italian seasoning

PROCESS

1. Preheat oven to 400

2. Lightly grease a medium size flat rectangular baking dish or a 10 in round pizza baking dish with EVOO

Crust

1. Grate the cauliflower in a large bowl until you have about 2 ½ cups

2. Heat in microwave for 7-8 minutes (or until soft)

3. Lightly beat 1 egg

4. Add egg to heated cauliflower

5. Spread the mixture onto baking dish evenly

6. Bake for 15-20 minutes

Sauce

1. Boil tomatoes in medium saucepan until skin begins to peel

2. Drain water from tomatoes

3. Completely remove skin off tomatoes and slice each tomato in half

4. Remove seed from tomatoes

5. Place tomato halves in sauce pan, add ½ cup water and simmer until tomatoes become a sauce consistency, stirring frequently

6. Add blended Italian seasonings to taste (oregano, parsley, etc.)

7. Spread sauce over baked crust

Toppings

1. Heat ½ tablespoon of EVOO on medium heat in large skillet

2. Add mushrooms, diced sweet potatoes, diced onions, baby spinach leaves, and diced red and green peppers

3. Sautee vegetables until lightly browned

4. Spread toppings over sauced and bake for another 4-5 minutes
